When the heat is scorching like in these days I always prefer to have a light dinner like this without compromising the taste. I'm not a fan of skipping meals even if it's 40°C outside.
Lately I love to add melon to my salads because of its light fruity juiciness. This bowl also has red radicchio for a fresh touch, black beans for hearty proteins and chopped walnuts because I'm addicted to them and they have so many health benefits. To finish I usually just sprinkle the salad with some fine quality organic sea salt to boost the flavors.
