Red Plum Crumble 

for 2

7 ripe red plums
1 tsp cornstarch
80 gr almond meal
50 gr brown rice flour
1 pinch sea salt
2 Tbs vanilla sugar
2 Tbs extra virgin olive oil
4-5 Tbs cold water

Dice the plums and add the cornstarch. Divide the fruits into two little ramekins.
In a bowl mix almond meal, rice flour, sugar, salt. Add the olive oil and mix until you have a ‘sandy’ mixture. Add the cold water and work quickly with your fingertips in order to form the crumbs.
You can let the dough rest in the fridge for 30 minutes. Arrange it then on top of the fruits. Bake at 180° for about 20 minutes. Sprinkle with some vanilla sugar.
